I can't remember how far apart to plant potato pieces. I have to buy my seed potatoes for planting in regular and jumbo grow bags and the instructions just say "space evenly." Does anyone know?
How far apart do you plant potatoes?
I plant mine about 20 inches apart, leaving enough soil to hill the plant as it grows. But I plant side by side, 20 inches, then to the center 20 inches forward, then another side by side 20 inches away. So you end up with 5 plants, staggered kind of like square foot gardening only using more space

Generally potato seed pieces are planted about 12" apart in the row at a depth of 3-4". Rows can be 24 to 36 " apart.
So there is room for the baby potatoes to grow. like drobarr said.
