A Boston PBS station has been running several retrospectives of Julia Child this weekend, and she did EVERYTHING on a 4-burner electric cooktop, identical to the stove (in slight variations) that I have had in all my residences over the last half-century.

All the professional chefs want gas; they state that by looking at the flame level under the pot, they have a "feel" for the heat level.

I know that experienced pilots talk about "flying by the seat of their pants." Probably the same idea.

The trade-off is safety. The professional chefs, in a professional kitchen, want to be able to "flame" a pan, to cook off any alcohol, or impart a smoky flavor, or speed fluid reduction. They deliberately spill a tiny amount of fluid, usually containing oil and/or alcohol, out the tilted back of the pan to ignite.

It ultimately comes down to a personal choice (like, what is your favorite color).

I'm a timid cook, so I will always go with the fraidy-cat choice of electric, which has the advantage of setting a specific number to preheat a pan...my egg white morning omelet is at 5.5 setting, and I walk away until it's time to pour.

(Gas stoves fetch a higher resale value when it's time to sell a house. But some of us don't move that often.)

Have not given an update on my MIL in some time. Back in the hospital. Diarrhea is finally over, but major circulation problems again. We just got back and her foot looks like that of a corpse. Tuesday is the last chance to avoid amputation. They will try another bypass. After seeing it today, I would be shocked if it works.

the home we rented was right on the water next to a beach. at low tide i was able to get some nice stone to build these. we left them standing when we left, would be interesting to know how long they stand. the ones with the levels are very sturdy so they should last if not torn down.

Just spoke with my wife. Because of the very low probability that the bypass would succeed, they have decided to go ahead with the amputation tomorrow. Will be about 2/3 way up the calf. Please keep her in your thoughts and prayers. Difficult days ahead - both physically and emotionally. Thank you.
