What vegetable is it perfect to plant now?

Since it is May, what plants would be ideal to plant now? I am speaking seeds.

I'd say pretty much anything except lettuce. It may get to bitter when it gets hot soon in your area

melons
sweet potatoes
successive plantings of cucumbers
Malabar or Ceylon spinach for an edible green

I will also be starting tomato seedlings shortly for the late summer/fall growing season.

Sweet corn. Keep it watered and it loves the heat.

Don't know how hot it gets in your section of Texas, but sweet corn, cucumbers, squash, common beans can't take the triple digit temps of July , early August here. Plus the pickle worms arrive around the 4th of July. Long beans are a subspecies of cowpea and take the heat well. While I set sweet potatoes in April, they will take the heat so a definite possibility.

Sweet potatoes should do well for you. We have the biggest sweet potato producer in the U.S. in our area and he doesn't start planting until the first of May and usually finishs the last of June.

I've never planted beets this late before but did this year because I had a little space not being used. I have no idea what they will do.
