Pot Size For Herbs

Im trying to grow some herbs ( Cilantro,parsley and oregano)
I planted them in a plastic shoe box sized box full of potting soil.they came up fine and are about 3 inchs high but they have not got much bigger in the last 2 weeks.

How deep do the roots need to get? iv seen pictures of parsley and Cilantro and they get waist high.

It's to late to grow Cilantro. It likes cooler weather and will just bolt.

I would at least put them in 2.5-5 gallon pots.

I have Rosemary growing in a huge pot and it's been doing well for a few years. Some of my sage is in a pot, but the ones in the ground do much better. Mint I keep in a pot, because I know from past experience if I don't it will spread everywhere. I've never had luck growing any other herb in a pot. They do great in raised beds, though.

Does anyone know what jewelweed is? Its a weed, & I would like to find some to make a paste for my poison Ivy rash.
