Harvesting horseradish?

I planted a horseradish root last year and it appeared this summer. It appears to be just one large bush. Do I dig the whole bush? If so, will there be more that one root since there seems to be just one bush? Do I replant, if so how?

I have never grown it, but my late mother-in-law did. You will find one root, with a lot of smaller roots attached. The little ones can be used to grow more next year, (if you have a basement that is cool to keep them in.) The big root is the one you want to clean, peel, grate and use.

I just harvested mine and believe me you won't be able to harvest the whole thing, because you can't dig it all up at once some of the roots will snap.So there for you will have horseradish next year, this is a very invasive plant.

I have had horseradish for years,and it does spread,but just dig the roots that are getting out of bounds.My problem is the roots I dug so far this year don't seem to have much flavor - or bite. I didn't dig any last year ,does that mean the stuff I'm digging is too old???
