Cabbage

I am eating cabbage, which was planted in Oct. & the ones that were in the ground since last spring, are still growing & are huge, but will not make heads. Nothing but leaves. Can I ever expect them to make heads, or should I forget about that. I'm in Texas.

Most likely you planted a collard by mistake. Collard is a non heading cabbage.

I can eat only so much of the stewed cabbage, with olive oil. I am preparing to pickle my cabbage. The online receipe says to add salt to it & cover in a crock for 3 days. Then to taste it. Is this the way most of you do it? Also, do I add any spices?
