Homemade Ketchup

I'm wondering if anyone has a good ketchup Recipe. I don't like buying grocery store ketchup because of the added High Frutose Syrup that is added. I still have tomatoes in my freezer from last summer, & I would like to make something from them.

behillman - I don't have a recipe for you, but you can buy ketchup that doesn't contain high fructose corn syrup. I purchased some yesterday from a local health food store.

Kudos to you for getting HFCS out of your diet. When I found out how bad it is for my liver, I went through my cabinets and threw out everthing that contained it!

Incidentally, they've started calling HFCS "corn syrup" or "corn sugar" now!

My son-in-law hates for me to tag along when he and my daughter go grocery shopping because I spend most of my time reading labels. Even things I've purchased before, because I find the recipes change.

HEB brand specifically says: No High Fructose Corn Syrup and the ingredient list is as follows: tomato concentrate (water , tomato paste), Sugar, Distilled Vinegar, Salt, Onion Powder, Spice, "Natural Flavor".

I bet you folks would be interested in seeing the movie "King Corn". I watched it awhile back, streaming on Netflix, and found it absolutely fascinating.

Two college guys in, I think, Boston, had medical tests done that identified what they were getting most of their nutrition from. They found that their bodies were essentially made from - CORN. The rest of the documentary is about corn and high fructose corn syrup in our food supply. The college guys go to Iowa, rent one acre of farmland and raise corn on it, then attempt to follow their crop through the food chain. HFCS is everywhere and in most everything, and "King Corn" is a real education.

I have several canning recipe books. Just go to a local book store and browse. The recipes I like most use less or no granulated sugar and more brown sugar. You can make up a halved batch and refrigerate and see which tastes best to you. (I don't go down to a quartered batch as I feel one loses something around that point). I'm at work and can't check, but one of the ones we tried had peaches and not tomatoes in it. The great ketchup experiment at our house is ongoing!

There is a canning forum and I bet they have more suggestions! Have fun!
