Hi Dori, You must mean Jerusalem artichokes? The perennial sunflower with a
tuberous root that's edible. I have them growing wild here. At least I think
they're wild - they could have been planted long ago. The Latin name is
helianthus tuberosa. They grow behind my border and get about 5-6 feet tall
with golden daisy flowers in the late summer. When I put in the border I
made the mistake of tilling over a patch of them. I've been pulling them out
ever since. They'll grow back from any little piece of the root left in the
soil. If you're growing them to eat make sure you get all the roots when you
harvest them. The roots are a long, skinny potato-like tuber that can be
cooked like just like potatoes. They're really showy when in bloom & the
gold finches love the seeds. They can be a weed though if you plant them in
the garden. I'll post a couple of pictures in the photo forum.

They are a weed, and I just ripped all of them out of my veggie garden--I hope, anyway. I didn't particularly care for the taste. They did make pretty flowers, though, so I transplanted them to the back 40 where they can spread all they want and not annoy me.
