New Year dinners
I had some apples to use up, trying a new recipe, they smell good.

Didn't have a normal meal at all today
Celeste recipe for "whoopie pies" pretty please...
OK, but i'll warn you these are more cake like, not sticky to the fingers if you know what I mean.
Makes 12 small whoopie pies, double the patch if you want more or bigger ones. ^_^
Outside:
1 c sugar
2 egg yolks beaten (save the whites, you'll need them for the filling)
1/2 c shortening
1 c milk
1 tsp vanilla
2 c flour
4 tabl. cocoa
1 tsp. B-powder
1 tsp. B-soda
1/2 tsp. salt
Combine all together and drop onto ungreased cookie sheet by large teaspoons. (I use the soup spoon from the hospital)Bake 9 - 12 mins in 350 oven. (10 to 11 mins is almost always perfect)
Filling:
Beat 2 egg whites until stiff, set aside
In separate bowl combine (approx.) 3 cups of confectioners sugar and 1/2 c of shortening. Add egg whites and beat together. Add 1tsp. vanilla and beat till creamy and sweet enough (add more confect. sugar if needed) for your taste.

For chocolate fiends, get a small amount of Smucker's "Special Recipe" Hot Fudge Topping, zap it in the microwave just a few seconds, to use as a dip.
(Very intense, and high in calories, as you can imagine; a tiny bit goes a long way.)
Last night DW made turkey pot pies (turkey frozen since Thanksgiving) from King Arthur "Classic Chicken Pot Pie" recipe. Tasted fine but crust did not turn out crispy like the picture. She will use a different crust recipe in the future.

Polish sausage, pierogis, corn.
We went to a Polish restaurant for lunch on Sat., and they also sell their pierogis, 5 dozen for $25. I got 5 varieties, one is blueberry and cheese. Not sure how to prepare it. Also bought the sausage from them, it was pretty good even though I don't care for it.

Gee, Deb...the blueberry ones sound like dessert....maybe served with a blueberry-lemon sauce?
I just googled them, and one suggested a caramel sauce. I bookmarked a recipe to make my own one day.
my mom fries all those sweet ones in butter... usually strawberry .. and my grandmother used to make plum ones.. no onions with the sweet ones

Bologna and cheese sandwich. Had a good lunch tho. Brussels, broccoli salad, and a barley salad with smoked mushrooms and cranberries.

After not making a meal since the 11th, I feel like I need classes. Made pasta last night and used some meatballs I had frozen before I left. Tonight it will be some kind of chicken dish. Probably a stir-fry of some kind. We love one dish meals.
I was surprised when I got on the scale that the cruise didn't do me in. Only a pound. I really tried to eat healthy at the one meal on board. But, you know that one meal was allll day long. My friend always wanted to eat. We slept very well also and with an inside room it was like a cave. One night I turned the TV on to the ship channel that had the camera shot from the bow, so I could tell when the sun rose. Silly me didn't bring a clock. I did ask for wake-up calls a few mornings.
Homemade beef veggie soup.....
Broccoli and cheese stuffed chicken breasts, mashed potatoes n gravy, corn, biscuits.
DW broiled wild salmon, roasted asparagus with parmesan, yukon gold potato. Yum.
YUM is right!
pot roast last night, chicken tonight.
Cobb salad for lunch, left over soup for supper...the pot roast sounds good, Jumper!
Salmom, pot roast, asparagus, mashed potato and gravy, homemade soups...it all sounds so good. Where can I find that restaurant....

I followed their instructions for making potato chips (very easy) and they turned out pretty good. (You must be able to see them as they cook so you don't overcrisp them.)
Made chicken in the crockpot for Sunday dinner.....chopped onions, celery, carrots, peppers, & parsnips....cut skinless, boneless into chunks....added a can of diced tomatoes, bay leaf, & turmeric...also a handful of green olives....it did come out tasty....
Yum...
A Digiorno pizza tonight and a salad. I am sick again. It started out the same as in December, so I gargled right away, but couldn't believe that I was actually getting sick again. DH says it just means that I need to go back to the tropics. LOL like that would happen.
