How does one get apples to ripen more after they have been picked? Some are still a lilttle green inside.

I don't know how to speed up the process BUT make sure you don't put them in the fridge, they won't ripen that way....maybe like everything else you can try putting them in a paperbag
Thanks for your reply flowAjen. I now have the apples sitting on the porch in buckets but will try the paper bags. Actually I have cooked a few and they weren't bad - not too tart but think they were picked a little too early. Apples are plentiful this year and we want to enjoy all of them! Thanks again.
You have picked them too early, the best way to find ripe Apples is to give the Apple a twist on the tree, IF it comes away in your hand it is ready if not, leave a few more days.
To help with your unripe Apples we always wrap ours in newspaper, lay them in layers but not touching each other, then place a Banana in the box and leave several days/ week, check every few days and the Apples tomato's etc will ripen as the gas given off by the Bananas helps, this is why when you buy fruit or veg from the store you don't place the banana's close to the fruit unless you wish the help from the Bananas.
In the olden days my grandmother did the newspaper thing but without help from banana's, she just placed the wrapped Apples and placed them in a drawer, in a cool place ofcourse.

Thank you so much for taking the time to advise me on our "apple" problem WeeNel - I just finished laying some of the apples in newspaper and left a few in paper bags as flowAjen had mentioned. Actually I did put a few tomatoes that fell off the vine in newspaper to finish ripening and it seemed to work so perhaps it will do the same for the apples. Don't have any bananas right now to add to the apples so I will see what happens. Thanks again for your interest.

Use the newspaper method, banana optional. Methane gas is what accelerates the ripening of apples, tomatoes and alot of other fruit/veggies too. Ripening fuit gives off this gas. All you are doing by wrapping the fuit in paper is trapping, thus concentrating, the gas around the fruit. The newspaper also allows just enough air to circulate to keep the fruit from rotting.
Grocery distributors and fruit distributors use this method all the time. Bananas and apples are commerially picked before they are ripe. Then they are stored in methane and temperature controlled environments. As qualtities are needed for market, the selected amount of fruit is exposed to higher concentrations of methane. This step is called proofing. The gassed batch of fruit ripens in days and is then sent to our grocery stores.
If you want naturally ripened fruit, your only option is to go to the grower when the fruit is in season.
