ANSWERED: What do I do to plants that need 'winter protection'?

I have 6 beautiful Honorine Jobert windflowers growing in my garden. I keep reading that these plants need winter protection for my zone but it never says what winter protection means. (I live in zone 5 a, southern Maine). What does that mean? Thanks!
