Last year's cabbage sprouting babies

I grew cabbage last year for the first time and cut one of the heads off instead of pulling it up. Now it has sprouted six little heads. I was expecting the cabbage to bolt and go to seed but now I'm curious what to expect. Any thoughts? Another one that I cut off looks like it's growing new plants off the stalk.

Typical behavior of cabbage. The tiny heads are usable, sort of like an overgrown brussel sprout.
