Awkward 'why' question...

CREZIERES, France(Zone 8a)

I was musing the other day and it occurred to me that many types of fruit come in 'black' and 'white' varieties... and they are not closely related in a way that would explain it.
For example... grape, fig and plum/damson/greengage.
Three different plant families but similar development of 'black' (= purple) and white (=green/yellow) varieties.
Can any wise contributor explain why this should be???

.... of course the corollary is... why haven't other fruits done the same - blackberries, blueberries?
