if not cut and come again, can i just keep harvesting from the outside leaves?

6aseeder, mustards can be considered cut and come again, mizuna can be harvested one leaf or so at a time, and tatsoi can be harvested from the outermost leaf leaving the center growth. I see your post is one month ago so hope this isn't too late.

my bokchoy bolted but newer tatsoi is still very small. i am puzzled by the bolting because we had a *very* cool (50-60's) may. last spring i grew lovely bok choy, in average-to-warmer (70-low 80's!) may.
this year i started seeds outside, and last year i started seeds indoors. so i think the length of day may be a factor. next spring i will try starting inside & outside. then there is the tricky bit of keeping track of who's who in the garden!
