Germination of Crabapple seeds ?

I have a question regarding the stratification of Crabapple seeds. Does the period of cold stratification begin once the seed has matured in the fruit, or after it has fallen from the tree ? The reason I am asking is that I have havested fruit from a tree that has already been through this past winter (still on the tree). Would this be considered ready to sow after I have removed the seeds from the fruits ?
