I'm not confused about my zone. I'm pretty sure we're right on the line, depending on which zone map you look at.
Anyway, I have about a dozen cauliflower seedlings and was wondering if it would be okay to set them out in the garden and put a plastic 2liter bottle over each one to give it a little protection. Or should I wait until first of March? It gets hot here early (sometimes mid-April) and cauliflower doesn't do well in the heat.

Once they are hardened off they will stand temps in the low 20's. I have never had any luck with plastic bottles. Plants cook on a warm day and grow too tender for cold nights. You are running a bit early, I start mine February 1 and plant out after the 15th of March. If the plants get stunted either by cold or rootbound, they tend to button ( tiny plants with 1 inch heads).
