louise i do not know - cindy is the cook for those:)
What's on the menu?
I haven't done stuffed peppers since Sept. , should put it on the list for this week. Thanks Bill!
I like to use red or orange peppers when stuffing. Not a clue for tonight....hoping to get a friend to go to lunch today.....
we had red here - i kinda prefer the green to be honest - still great with red
I like the red better if I want to actually eat the pepper part. The green ones get too bitter for me.
we constantly have the "fight" about peppers - wife only likes red - and i prefer the green - i'll eat either though especially with the canned t's from our garden used for the sauce:)
My husband pretty much doesn't like peppers in anything. He likes stuffed peppers but he won't eat the pepper. So I don't waste the yummy red ones on him. They usually cost at least double, some times triple, what the green ones cost.
I developed a recipe that I call Indian Orange Chicken Stew. Here is the recipe:
Indian Orange Chicken Stew
This recipe can be made either in a slow cooker or conventional oven. You can adjust spices and ingredients to what you like. I used an Indian spice called Garam Masala, but you can substitute whatever you have on hand such as any combination of cumin, coriander, cardamom, curry powder, etc.
INGREDIENTS
1 2 oz can tomato paste
1 10 oz can cream of chicken soup
1 cup orange juice
2 cups chicken broth
2-3 tablespoons Garam Masala. See description here: http://en.wikipedia.org/wiki/Garam_masala
Salt and pepper to taste
Fresh garlic to taste - roughly chopped (I used the whole head)
2 onions – peeled, quartered and sliced thinly
1 green pepper – seeded and sliced thinly
1 turnip – peeled and sliced into small pieces
8 potatoes – sliced into about 1 inch pieces pieces, peeling optional
1 bag (8-10 pieces) of frozen boneless, skinless chicken breasts or thighs that has been thawed for 2 days in fridge.
2 tablespoons olive oil
2 tablespoons butter (optional)
PREPARATION
Place all ingredients except chicken in slow cooker or large roasting pan and mix together well. Brown chicken in skillet in olive oil and/or butter and place in slow cooker or roasting pan.
If using slow cooker, cover and cook on high 3-4 hours. If using oven, place covered roasting pan in a 400 degree oven and bake for 1.5 hours. In either method, make sure chicken is cooked through and all vegetables are tender.
Enjoy!
Mmmmmm, getting hungry again! That sounds de-lish, Dave!
I love the red and orange peppers for eating raw, but I usually use the green ones with 4 lobes like Sherrie does for stuffing. I do blanch mine for about a minute before stuffing them.
I'm out of food here (grocery day is tomorrow), so more chicken salad and tossed salad with fresh berries for supper tonight. It's so cold here that a summer salad plate doesn't really work the best, but it's what I have on hand. lol
Nice, Dave! I like Indian food.
That chicken does sound delish.....cold, Louise? Come back to NE....no, don't...it's very cold here, about 10 degrees below normal for early Dec. I don't stuff the whole pepper, folks....I cut it in half lengthwise, then stuff both halves.
I do that as well sometimes, Marilyn. It depends on the size of the peppers for me. I don't know if it's a cold or not. I'm feeling better today, thanks to Victor's remedy. I need to keep it up longer, I think. I hope you don't get reinfected!!!
more soup... I'm freezing
Certainly is a great day for it. Feels like January out there!
Belly has not been right since had that NASTY pizza on Friday night...it was broth and rice for me
Wow - three days! Feel better.
feel better Jen... sorry to hear it... I said the same thing to Randy today... it does feel like January
It may be a stomach bug, Jen....my oldest GD is sick, ended up at the doctors today. Soup for me also tonight....I can't seem to get warm!
Gonna try making meatloaf for the first time. Should be easy.
Def wasn't a stomach bug. I knew it was from the pizza
Bad pizza.
Had sweet italian sausages in a marinara sauce over penne with galic bread and a salad on the side.
Tonight it's ham, mashed potato, strings beans in an almond sauce and dinner rolls.
Yeah it was sooooo nasty...probably the worst pizza I've ever had...even worse than the pizza in FL
Ham steak tonight with sweet potatoes, mac and cheese, green beans
Ugh there is nothing worse than bad pizza! That happened to me before so I feel your pain. :(
filet mignon, mashed potatoes and gravy, broccoli
rotisserie chicken and fresh broccoli here. I'd swap for the filet mignon, Debi!
Lord, everything sounds so good! Victor, hope the meatloaf turned out well...Debi, can't remember when I've had filet last....some time ago! Tonight, baked mac & cheese with tomatoes & ham.
Yes it did! Thanks.
Who uses a slow cooker? Is it worth it?
Love my slow cooker!! Set it and forget it...Oh wait thats the rotisserie!!
Do you mean like a crock-pot? I love beef stew in it!!!
Yes - crock pot.
Someone gave me a slow cooker for a present but I've never used it, it's still in the box. I use cast iron pots for slow cooking.
can't believe anyone does NOT have a crock pot - very handy and they are cheap too.
I love our slow cooker, aka crock pot. I am the chief cook in our family, and I love using it for soups, stews and even roasts. Lots of recipes available on the internet, just search and you shall find. :)
I use my Crock Pot once in awhile....sometimes food gets mushy in there. Beef stew is very good, but I have a large ceramic covered pot that I use most of the time for the oven.
I rarely use my crock pot, I do use it for pulled pork, but that's about it. I'm gone from the house 9 1/2 hours on work days, and that is too long for stuff in there, and if I'm home, I'd rather use the stove.
Yeah, I'm wondering if it would useful other than for soup or stew.
chilli
Pork Chops fried in olive oil & garlic, with macaroni & cheese and a small salad tonight.
- Oh, and some Italian Bread and cookies!
