My husband pretty much doesn't like peppers in anything. He likes stuffed peppers but he won't eat the pepper. So I don't waste the yummy red ones on him. They usually cost at least double, some times triple, what the green ones cost.

I developed a recipe that I call Indian Orange Chicken Stew. Here is the recipe:

Indian Orange Chicken Stew

This recipe can be made either in a slow cooker or conventional oven. You can adjust spices and ingredients to what you like. I used an Indian spice called Garam Masala, but you can substitute whatever you have on hand such as any combination of cumin, coriander, cardamom, curry powder, etc.


INGREDIENTS

1 2 oz can tomato paste
1 10 oz can cream of chicken soup
1 cup orange juice
2 cups chicken broth
2-3 tablespoons Garam Masala. See description here: http://en.wikipedia.org/wiki/Garam_masala
Salt and pepper to taste
Fresh garlic to taste - roughly chopped (I used the whole head)
2 onions – peeled, quartered and sliced thinly
1 green pepper – seeded and sliced thinly
1 turnip – peeled and sliced into small pieces
8 potatoes – sliced into about 1 inch pieces pieces, peeling optional
1 bag (8-10 pieces) of frozen boneless, skinless chicken breasts or thighs that has been thawed for 2 days in fridge.
2 tablespoons olive oil
2 tablespoons butter (optional)

PREPARATION

Place all ingredients except chicken in slow cooker or large roasting pan and mix together well. Brown chicken in skillet in olive oil and/or butter and place in slow cooker or roasting pan.

If using slow cooker, cover and cook on high 3-4 hours. If using oven, place covered roasting pan in a 400 degree oven and bake for 1.5 hours. In either method, make sure chicken is cooked through and all vegetables are tender.

Enjoy!

As far as stuffing a pepper, I always pick out the ones with 4 lobes (not 3). As far as 4 verses 3 there is no difference in taste or anything except they stand up better.

I love the red and orange peppers for eating raw, but I usually use the green ones with 4 lobes like Sherrie does for stuffing. I do blanch mine for about a minute before stuffing them.

I'm out of food here (grocery day is tomorrow), so more chicken salad and tossed salad with fresh berries for supper tonight. It's so cold here that a summer salad plate doesn't really work the best, but it's what I have on hand. lol

That chicken does sound delish.....cold, Louise? Come back to NE....no, don't...it's very cold here, about 10 degrees below normal for early Dec. I don't stuff the whole pepper, folks....I cut it in half lengthwise, then stuff both halves.

I do that as well sometimes, Marilyn. It depends on the size of the peppers for me. I don't know if it's a cold or not. I'm feeling better today, thanks to Victor's remedy. I need to keep it up longer, I think. I hope you don't get reinfected!!!

I love our slow cooker, aka crock pot. I am the chief cook in our family, and I love using it for soups, stews and even roasts. Lots of recipes available on the internet, just search and you shall find. :)

I use my Crock Pot once in awhile....sometimes food gets mushy in there. Beef stew is very good, but I have a large ceramic covered pot that I use most of the time for the oven.

I rarely use my crock pot, I do use it for pulled pork, but that's about it. I'm gone from the house 9 1/2 hours on work days, and that is too long for stuff in there, and if I'm home, I'd rather use the stove.
