strange seedlings

I got some pumpkins from a display- (we feed them to our goats-natural wormer) that I think were atlantic giants --red color. when I split them open there were about 10-15 sprouts dark green about 3" long. Is this normal?

I cut open a tomato once, and some of the seeds inside were sprouting.

I've had the same thing happen with papaya, it is a melon, and I think it might be due to long term storage at a less than prime conditions for storage.
