FlowA - here you would be in great demand. The hotter the better. I have seen grown men eating with tears running down their faces and all the time praising the dish. Must be a man thing.

I had strawberry gelato for my dessert yesterday...wasn't planning to, but members of my church were in the restaurant, & after they left, the waitress told me they paid for tea & dessert for me.....as I was having a depressed sort of day, their kindness really brightened it up. Have a batch of carrot ginger soup on the stove, will take some over to my Mom's later......

I had leftover grilled eggplant & filet beans....sauteed some onion & garlic, cooked some pasta, & added to eggplant mix...tossed in some chopped kalamata olives, tomatoes, & parmesean....have enough for tonight.....

Got the carrots and the potatoes (Walmart is not as expensive as other supermarkets...but boy it sure has some lousy quality veggies...) and the roast is in the slow cooker. Nice to have dinner sort of done - got a lot more housework to do today -
Friday is cleaning day - my day off from the 'other' job.

Last nigth I made chicken marinated in Carribean Jerk then grilled it. Served with black beans & rice, yeast rolls and pea's w/pearl onions in a garlic sauce.

Tonight it will be parmesean chicken served on a bed of lingiuni, a garden salad and a loaf of italian bread.

A friend gave me a recipe for squash cookies, made a bath on wed and they are gone. :) Request for another batch already!!

All the men judges thought it could be hotter though. Sheesh, I said if I made it hotter I wouldn't have been able to taste test it. So next year I need to make 2 batches.

Anybody have an excess of squash they want a recipe or two to try?

Squash Cookies:

4 cups flour
2 cups sugar
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 1/2 cups crisco
1 1/2 cups of squash
2 eggs
2 teaspoons vanilla
Mix all together and drop large teaspoons onto cookie sheet. Bake at 350 for 10-15 (depends on how big you made the cookies) minutes.

Frosting:
brown 1/2 cup of butter
4 cups of confectioners sugar
4 tablespoons of milk
2 teaspoons of vailla.
This makes a kinda of glaze....spread on top of cookies.
*Brian does not like the glaze, he eats the cookies plain and warm with his coffee. ^_^

Mmmmm...sounds good! Jen, congrats.....that's super! Made a pork roast today, with mashed yams, applesauce, & broccoli.....there were 8 of us, & I sent everyone home with leftovers...
