I think apple pie is the ultimate comfort food!!! Warmed with a scoop of ice cream, of course!
Usually I shun bought pies, but my stepson bought an apple-cranberry at the fruit market in Kport....it was very good! The apples were firm & tart, & the crust was even decent.....must have been homemade by a Mainer......my comfort food tonight is mac & tuna salad....
Yes, apple pie (Mom's) is one of my faves. Also pot roast and well-made mashed potatoes. Ice cream. Lemon meringue pie. Key lime pie.
I get as much comfort as I can from food...mostly chocolate. ^_^
Chocolate truffles (at least 60% cacao), ice cream with moist strawberry cake, hot crispy Pizza, warm italian bread with melted butter,,
( I have to stop now, this is torture...

we have moved into the home made pizza season - i requested it just this week - stuffed cabbage - leek potato soup (i have opened the leek field for picking) pot roast - ham - and on and on ..................
Recipe for the potato leek soup, please....I made it once and it came out too watery and bland

Stuffed cabbage.....I put grape jelly in mine.....
Had my other favorite (Rachel Ray) tomato sauce - turkey bacon, onions and garlic. I add fresh basil too. Yum!

Fried fish (coated w/ egg & potato flakes), baked scalloped potatoes with cheese, Greek salad w/ various olives.

I skipped the traditional meal and ate at Stone Cold Creamery instead. ^_^
Ok, im going to share my secret ORIGINAL recipe that my Mom handed down to me....I have no idea where she got it and because she tweaked it and made it better, I named it after her. ^_^
Connie's Pumpkin Bread
Ingredients
1 (15 ounce) can pumpkin puree (straight pumpkin..no spices in it. I have a hard time to find it and end up doing fresh or canned Organic from the All Natural Health Food Store)
4 eggs
1 cup vegetable oil (original recipe said X amount of butter but oil made it moist everytime so Mom changed it)
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
pinch of salt (it called for 1 teas. but Mom had high B.P. so she changed this too)
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup walnuts (optional)
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans or several small pans.
In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon and nutmeg. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

I'm not a fish eater, WC, but I bet chicken would taste good done like the fish....olives are a favorite food with me! Pixie, thanks for the recipe.....

Yep, it works for chicken too, in fact it's fried chicken & baked sweet potato w/ a salad for dinner tonight.
I went out to lunch.....butternut squash-apple soup, & a grilled cheese with hot relish on it....the soup was a little sweet, but a good foil for the relish.....
Hopefully this will give many a good laugh.
Growing up in S Florida, you have no clue about apples. (or was it just me?) Homemade apple pie? You can do that?
My first fall here it was like, Right, all these apples are "different", sure they are. (seriously, no clue - if there isn't a sign to explain what they "do" I keep going!)
All that said, I'm in love with a simple apple crisp. And I do it myself! Who knew???!
[note: I can only eat cooked apples because of my birch allergy so I can't much appreciate all those "different" apples]
try adding a cup of raspberries to your apple crisp, I actually have a recipe for it if you are interested
Oh, and my simple apple crisp is just that. And is an adjustment to an EAting Well recipe.
Topping:
1/2 c rolled oats
1/4 chopped pecans (secret yummy ingredient!)
1/8 c brown sugar
2 TB veg oil
cinnamon (can't remember, just throw some in!)
Mix topping. Skin and chop apples. Place apples into baking dish. Top with topping. Bake at 400 degrees for 30 min.

I chop the apples and it makes like a chunky applesauce, which I like. I figure you all know enough on how to chop your apples to make it like you like. And that topping works for anything. I take a large can of peaches, rinse and chop and bake like above, and YUM. Oh, and I did blueberries and nectarines this summer and was wowed. No, I really didn't eat any of this stuff as a kid and had no clue you could combine those two. I feel like a dunce, but am loving discovering it! :)

Fresh taters from the garden w/ex.v. olive oil and rosmary (from the garden) and ground italian spices., brussell sprouts(also from garden) and porter house steaks w/A-1 and brownies w/vanilla ice cream for dessert.
Have I mentioned i've gained almost 5 lbs. since the wedding?? Wonder why?? LOL

For breakfast, I had a crumpet & a peach smoothie......will eat lunch at the farm....dinner? Depends on if I feel like cooking or just eating leftover borcht.....getting too lazy! Pixie, you don't look like you gained an ounce!
Grilled hot dogs, (w/casing), for brunch in about 30mins, Pizza from an excellent Italian pizzeria in Port Jeff tonight.
Nice Italian restaurant tonight.
