I've found plenty of information about when to harvest mature Holly Hock seeds.
My problem is I found them AFTER harvesting IMATURE seeds :(
I have not found anything online about collecting to soon...
Can I still use the immature/green seeds that I've collected? Do I let them dry out?....

Hi... I had that happen to me also a wwwwwhile back. They might work if you do not take them out of the seed case, and just let them be till they turn brown. Do the same if you took the total seed case and did not take the seeds out. If they are really green, or white, you most likely will not be able to do anything with them.
Hollyhock's seed case will start to dry out and turn light tan. You will see the edges of the case start to split. Watch it and when you see a good split you can clip off the case. On the other hand if you know there is a storm coming, like a hard rain, I do out and take off the seed pods (cases), and let they dry in a dry container, not plastic. They will dry and pop. Make sure you do not do this if you can peek inside and see the seeds are not very dark brown.
You can also plant them now and they will come up. If they do come up you will also have a head start on next year.
You have some time before you have to worry about winter. I just realized you are in Zone 8. That is very warm is it not?
No snow right? Just put them in planting stuff and see if them come up, if not.......
Send me a SSAE and I can send you some pink ones. I sell a lot of them on a website and can either let you have some of my extra or exchange seeds if you want.

Its amazing how much you can find on the internet about one thing, yet find nothing at all about the same topic!
I currently have a nice pink HH right now. Its my first year growing them & I love them.
I work in a hospital and talk flowers a lot w/ my patients.
A recent patient also has just grown them & was interested in more colors.
I found some yellow & deep burgundy growing in town @ a local church.
I told my patient that I would share w/ her & mail them if I couldn't get them before her d/c.
Thats where I got my "green" seeds, I went to the church yard after work.
I'm hoping I will be able to get more but time is against me. They have been pruning the stocks before they have time to mature :(.
I'm afraid when I go back for mature ones they will be gone.
The pods I did pick were brown, not green, but the seeds inside were not a dark brown yet.
I'm wondering if it would help to put them in a container w/ some silica gel?
As far as Zone 8 goes, I don't think I would consider it "very warm"...even w/o snow.
We have some warm days right now but even then the evenings are quite cool.
I might have to take you up on the offer to exchange some seeds. That is very kind of you!
I'll let you know how my seeds work out.

Hi, I am an old member but new at posting but i have a question about hollyhocks. I just won some hollyhocks....and i am wondering if it is too late to put them in the ground? I want them to start next year...but dont want to wait till next year to plant them...lol. Any suggestions? I'm in a 4/5 zone area. thanks, Christine
