tomatoes in a glass jar

After complaints from my family - year, after year, after year that the tomatoe season was too short at our house. I stopped being lazy. I planted them this spring and then I snipped off the ends and put them in water to start some more for a later season.

I put some in a glass jar filled with water. The roots were impressive. They formed big white hairy roots. They are a growing in the garden right now.
BUTTTTT the ones I started in plastic cups, or tin cans that do not let the light in - the tomatoe tops just sit there and rot.

How come?
