Eggplant started turning green on the plant. Can I eat it?

How do you know when an eggplant is ready to pick. They seem to be purple when they set fruit. I left the first one for over a month thinking it may get larger. (These are the standard size, not Japanese.) It started turning green so I picked it today. Is it safe to eat? I know you shouldn't eat green potatoes and was wondering if the green eggplant might also make me sick.
It is a little larger than a softball.
I'm thinking eggplant parmesan. What do you do?

It is safe, but probably not very tasty. Eggplant is not meant to be eaten ripe only in the immature stage. They get bitter and seedy.

So, Farmerdill, how long should I leave an eggplant on the plant, being as it is purple the whole time?
I'm going to cut this one open and see what it looks like. At least I know I won't get sick if I eat the darn thing.

When it edible, the fruit will have a high gloss, when that shine starts to fade, the quality deteriorates rapidly. This is true for whites, greens and multi-colors, but is more obvious on the purples.
