How do I keep my spirea blooming all summer long and into the fall?

Which Spirea do you have? As far as I now, they only bloom is Spring, early Summer. Someone else may correct me.
I trim off the dead flowers and mine will bloom again. Not as much as the first time. I've found it also depends on how much water it receives as well. I usually get mine to bloom about 3 times, each with decreasing amount of blooms.

It may depend on what kind of spiraea it is--I think the ones that bloom early in the spring will really only bloom once, but in my experience the summer flowering S. japonica/bumalda cultivars will often rebloom if you deadhead them.
Also, I'm not sure which spirea I have. Mine could be one that is suppose to re-bloom.
