To anyone who knows about asparagus ferns...can they be taken from a pot & put into the ground? If so, do they spread and/or grow in height? Thanks!!

Yes, they can be grown in the ground. In my experience they can spread a bit and be quite hard to remove once they're in the ground though, so you might want to consider keeping them in a pot.
I'm not sure which kind you have--here is a picture of one type growing in the ground so you can get a sense for size:

Asparagus plumosa will grow 4-5 ft tall.
I have seen them supported by a lattice trellis just like vines. These do have fruits that when dried will fall and germinate.

my plumosa fern reaches over 12 feet... it used to be in a hanging pot and it fell one year and rooted itself into the ground.... i use heavy duty thread to make my trellis to train it... its over 30 years old, older than me, and ive only seen it flower 2-3 times in my life... i have never seen berries on it
