Should there be threads for favorite veggie recipes?

I mean, growing the veggies are just a part of the whole cooking and eating experience. I'm surprised that most home gardeners are growing squash. It doesn't seem that popular at the grocery store. What does everyone do with their squash?
I always have globe basil growing so can always make up a tricolor Mozzarella,tomato,basil, balsamic vinegar appetizer salad if I've got too many tomatoes sitting on the counter.
I only recently starting reading this website and there may already be posts/threads like this. Hopefully in the free section.

The reason we don't buy squash at the store is because it is too expensive. Hav e you ever tried buying okra? And brussel sprouts? They are also very expensive.

I grow all those too. Didn't have any luck with brussel sprouts. organicfarm, I'm freebie-ing it too right now since I can't afford at subscription at the moment.

yellow squash is 1.89/lb at the store. I am growing it to have a ready supply for the recipes below.
I guess I'm too cheap to pay for the subscription here. Internet should be a source of free info, I think.

MEXICAN CALABASITAS recipe-
Brown 2 lbs cubed pork in a little veg. oil, anykind, cheap cut up pork chops are fine
Add 1 whole onion chopped and half a garlic head, minced, to soften
Add 1 tablesp. cumin powder, 1 packet Goya seasoning powder (ie. w/ Cilantro n Tomato OR "Con Azafran"), black pepper, some salt now
Now, about 10 min. into it, Add 3 cups chopped tomatoes with 2 cups water OR one 15 oz. can of chopped tomatoes (garlic or mexican style) plus 1 extra can of water. Add 1 15 oz. can corn kernels (or fresh corn, if you have it) Add 2 medium or small size yellow squashes, cut 1/2 thick, then quartered or halved. Optional-some chopped cilantro at the end. I don't normally put this in.

cover, reduce heat, simmer for 30 minutes or so to cook the meat and soften the veggies.
add a bit more salt to taste
uncover, let the sauce thicken up a bit. Excellent on its own or served in flour tortillas for tacos.



SQUASH SAUTEED WITH TOMATOES- Good side dish. Similar to a frozen version from the store.
Saute with olive oil, 1 chopped up onion, add 1/2 inch slices of yellow squash, as much as you want,
Add 3/4 can Hunt's fire roasted canned tomatoes with garlic. OR fresh tomatoes/garlic/little bit of Italian seasoning plus 2 or 3 cups water. Simmer uncovered til squash is good texture for eating.

If/when you can afford it, the membership fee is well worth the money! There are so many forums that you will have access to, although the free ones aren't bad either. You could always try the 2 month ($5) one and see if you like it.
