I had a similar experience with yellow straight neck squash. I usually dig a hole 2 feet across, fill it with rotted manure, replace the soil on top of the manure forming a hill into which I plant 8 seeds. After germination I thin to 4 plants per hill. On one occasion I had a about 5 seed left over. I plant the seed in a row in a spot in the garden that the soil is not the best without amending the soil in any way. These plants did not grow as well as the plants planted in hills and the fruit was as you described small and hard skinned. I noticed in your post where you indicated that your plant was growing well which is unlike my experience. That is where my expertise ends and just thought I would mention it to you. Another consideration is the amount of water and fertilizer the plant is getting. Something else just came to mind and that is if you have only one plant it could be a pollination problem. Sorry but that is all I have for you.
