How do I know if my crotons had survived after a hard freeze? Do I cut them down? All the leaves have fallen off?

I'd leave them alone for a bit until you can see if they're going to put out new growth. Once that starts, then it'll be easier to tell which parts are dead and cut those out. It can sometimes take several months for cold-damaged plants to put out new growth, so be patient before you give up on them.
