Onions for my chili dogs

Hello fellow gardeners!

I'm new to this forum and have really enjoyed reading and learning from many of the posts.

I'm looking to add onions to my raised beds. Not any of the sweet onions, but one of those real pungent varieties. You know the ones ....... the ones that are starting to make your nose run and your eyes water right now. They make for the best onions to add to the top of a Nathan's chili dog - we really love them, and so do the grand kids.

Which varieties make for the best eye waterers and nose runners?
Can you recommend a source for seeds or sets?

Quite a few choices, but all long day storage onions. From plants, Copra, Strerling, Red Zeppelin, Big Daddy, First Edition. From sets, Stuttgarten, Yellow Rock, White Ebenezer, Red Wetherfield. Lots of others but these are easily available.

I seem to remember reading that onions become more pungent the longer they are stored - but I could be wrong :(
