The space I have available for vegetables is only 3ft by 15 ft. I don't want to ignore the vertical space I have so my question is this. Aside from beans and peas, what will grow well on a trellis?

cucumbers will do well, you can get tomatoe varieties that are more viney and grow squash as well.
3 by 15 can be a decent size space if it gets enough sun.. consider growing something under everything as well, for example, I grow squash under peas, basil and garlic under my potatous , and lettuce under the eggplant and peppers.

Squashes and melons will do well. You may need to guide them a bit in the beginning. I have seen canteloupe and other melons on trellis. I grow luffa (both angled and smooth skin), fuzzy melon and bitter melon on trellis.
Joe's companion planting ideas is a very good and practical one.
I also start seedlings (like napa cabbage, broccoli, bok choy, etc.) in containers throughout the year. When an area is harvested something is readily available to fill the gap.
