What causes carrots to be bitter? I planted several types and the only thing they have in common is that all are bitter. Also, carrots in the store look so smooth and nice and mine have all these bumps and nodules on them. Is it okay to leave carrots in the ground indefinitely if not needed immediately?

Sounds like what happens to Carrots when they're left in the ground too long.
To answer your first question accurately, bitter carrots contain relatively high levels of 6-methoxymellein or isocumarin or 3-methyl-6-methoxy-8-hydroxy-3,4-dihydro-isocumarin.
Best bet for sweet carrots in TX: grow them in winter!
