Russian Olive Trees YUK!!!!

What to plant??? Next week I am having 600 ft of russian olive trees removed from my road front property line. They look horrible because VDOT comes along twice a year and mows one side off...No I didn't plant these guy...just got them as a gift when I bought the land...The question is what can I plant at the road line that would be attractive and deer resistant? I am not trying to achieve living behind a "Living Wall" I just want a mix of evergreen and flowering trees.
Something that makes you smile when you drive by.............

Also - be sure to check with neighbors or a local nursery. I have found that deer tastes can vary region to region. For example: if I dared plant black eye'd susans, or dalia, odr hyacinth or many other on this list (including marigolds as I found out this year) the plants would be gone next morning. Also I have thuja (evergreen) that should be nibbled bare but....so far so good and its been three season almost four and the deer walk right by.
