Hi Gang,
I have a bumper crop of beets this year. The fresh ones are wonderful, but I know that we will have a lot of leftovers, and I'd like to try pickling the ones that we don't get around to eating fresh.
Does anyone have a good recipe? I prefer ones that aren't overly spiced or sweet, as I'd still like to taste the beets despite the pickling brine.
By the way, I have a wonderful beet salad recipe that incorporates the beet greens in addition to the actual beet. It is a great way to use ALL of your harvest! I will be happy to share if anyone is interested.
