Is it too late, plating in the fall? Zone 7 Charlotte NC

So this is my first year, my summer garden did okay, but my zucchini overshadowed everything and blocked the sun. Plus all the work I do trying to get the red clay decent, failed. I am bringing in real soil for fall.

Is it too late to plant in the fall here in Charlotte NC/Zone 7? I have 5 hours of full sun.

I want to plant pumpkins, spinach, corn and mustard. Are these good choices? Are these easy? Will these do well in the fall?

Far too late to plant any of these, plant winter cabbage perhaps. Yes these are all fairly easy but need to be started much earlier.

I don't know if you're planning on doing any ornamentals or just vegetables, but if you were planning on adding any shrubs, perennials, etc then fall would be a perfectly good time to plant those.

You MIGHT get some mustard greens or collards or chard before a hard freeze does them in. It would be chancy. The other crops you mentioned wouldn't have a ghost of a chance to produce before a freeze got them. If you can find cabbage and other greens as transplants that is your best bet. Not ornamental kale or cabbage transplants. Those are best planted in about 3 months from now.
