Days to harvest?

When a packet of seed says '75 days' what does it mean? Does it mean it is ready to harvest 75 days after sprouting, or 75 days after transplanting, or what? Thank you.

I think it's from the time you plant the seed. Or maybe from the time it sprouts...other things like transplanting people are going to do at different times so they wouldn't be able to base days to harvest off of that.
