Where to pick lemon balm?

Hello friends! I was wondering, regarding my new Melissa lemon balm plant, where to pick this precious herb? At the leaf or further, at the stem? I appreciate the help.

Cut the heck out of it and leave a few nodes above the last leaves. It's hard to kill. Bugs will probably be a greater problem.
