When are eggplants ready?

I'm a novice eggplant grower. I Don't know when they should be picked. Have 16 fruits growing now. Biggest is 7" tall and 5" wide. They're Black Beauties. Also have a variety called "Beatrice ". Thanks.

Like cucumbers, anytime they are big enough for your purposes. As long as they are shiny they are good, as they begin to lose the shine ( get dull looking) the quality deteriates rapidly. They are used as immature fruits, unless you are saving seed, you do not want a ripe eggplant.
