Let's Talk Turkey - Year-End Edition

Yes, Willie, I have suffered through a dry turkey. Yuck! But it must be an awfully big turkey to cook for 2 hours. I cooked my bird, which was just over 20 lbs., in 4 hours at 325. Came out nice and moist. Poured seasoned, melted butter over it and covered with tin foil, then uncovered during the last half hour to brown it.

I would definitely like to make that cinnamon monkey bread. Sounds very delicious!

This was only a 13 pounder. Regular instructions suggested 4-5 hours in the oven for this small one. I have done 25 pounders in the grocery bag for three hours with identical results. Though, unlike mom, I don't stuff the bird.

I am sure you will love monkey bread .... as Candyce states, it's always a big hit. You can even vary it using herbs and grated / shredded cheeses to match the dinner entrιe.

I bet you would love my Country Mashed Potato Cheese Bread. It's like a jelly roll, only you fill it with cheeses, pimento, herbs, etc., roll it up, let it rise one final time, then, split the top before you pop it into the oven ...... MMMMMMMM.

Willie, that's crazy that the regular instructions said to cook a 13 lb. turkey for 4-5 hours. My instructions said 4 hours for a 20 lb. turkey. I think a 13 lb. one would come out very dry cooked for the same length of time. Hmmmm..... I think next year I'm going to do your method. Sounds delicious!

All those recipes sound yummy--I love a moist turkey, & chicken, too, which is what I baked yesterday---under the breast skin I placed lemon slices, fresh sage & sliced kalamata olives--in the cavity went a halved orange, & halved onion--rubbed olive oil over it & it was very good---gave most of the leftovers to Mom & sister, but saved enough for tonight!

I can cook up to a 14lb. turkey on my "Set it and forget" Rotisserie and it's always moist too. We didn't do turkey for the holiday this year though, we rotisseried a Prime Rib instead... Oh YUM!!

Karen: I'll post the potato bread recipe. It's my fav. bread recipe.

Jen: I don't use "tons" of crisco, just enough to rub through the paper, which must be completely saturated. What doesn't rub through from the inside, I finish up from the outside. I stick my hand/arm in an old bread bag, trust me, you'll not want a greasy arm.

Do with the turkey what you will before you place it in the bag. I never do anything to it, just throw it in, unseasoned. You can do anything, peanut butter, rosemary, oranges, what ever, I would imagine.

Once it is inside the bag, seal the open end tightly and completely shut.

If a big bird, fold over the opening and staple it shut, that's what I do. If small enough (like the photo), you can just fold over the opening so the bird sits on top of it to roast. If two big to fold the opening over and staple, simply use two bags.

It is important to make sure the bag is sealed shut, as I think the superheated steam is what cooks and moistens the bird. For gravy, I simply strain the pan drippings, add water and cornstarch. Even withOUT any seasonings the gravy is always tasty (I believe the turkey has broth in it).

Here is a picture of the turkey in the bag as it sits in the roaster on the oven shelf. This is after the 500ΊF hour and the 400ΊF hour, just as I turned it down to 300ΊF. You can see, I just folded the open part of the grocery bag underneath the entire thing so the bird sits on top of it and seals it shut.

I hope that made some sense!

Willie, could you coat the bag with butter instead of Crisco? Peanut butter on a turkey, Willie? You're joking on that one, right? I have cooked roasting chickens in those plastic roasting bags you can buy, and they come out very moist in those as well, as it steams the whole thing.

Oh, another question, how do you post a link to a single post like you did, Sherrie, if there is not picture to click on to get it to a single one?

Wren pretty please post your daffodils on the Bulb Forum too if it's not too much trouble. There is a thread 'Early Blooms' that some FL members have started. This is important for those who in the time of the cold and the dark, live vicariously through other's gardens. This can be the toughest time cuz waiting.... waiting..... waiting... o and waiting too. Thanks muchly Wren. Isn't this just SO exciting!!! I just KNEW it was the first day of spring already ^_^

I am not sure butter would work. Though, I do not know.

I know when you are frying in butter, the butter burns quickly if the heat is too high. And this is pretty high heat. I always keep the heat low when cooking with butter.

I and not sure the butter would "burn" as in to start a fire, but "burn" in the sense of to scorch.

I've heard you can rub peanut butter under the turkey skin before roasting. Never tried it.
