How would one go about buying a gift subscription for someone who's not signed up? I want to buy my mother-in-law one for her birthday.

She needs to sign up first so that she has a username, then you can buy her a subscription.

Maybe you found this already but in case you didn't, once she's got a username, then if you go to "My Info", under the "your actions" section you'll see a link to purchase a subscription for yourself or somebody else.

What if someone subscribes for you as a gift, how can we find out who it was and Thank the person?

You can't...if they want to let you know then they can, but otherwise they stay anonymous.
