Edible Dandilions

Olympia, WA(Zone 7b)

I also posted this in the Dirt Cheap forum, but I figured it may reach more people here who might have an answer for me...

I was thinking yesterday about our horrible dandilion problem when I realized that some dandilions are edible. So rather than weeding all of them, maybe I can use some of the leaves for salad greens or something. Then, rather than being a total nuissance, the dandilions will actually be useful! But before I go out and eat weeds in my lawn, I wanted to know what kinds I can eat and what ones I can't. I never use chemicals in my yard, so that's not an issue, but are any kinds poisonous? I imagine the fuzzy and prickly varieties wouldn't be very good. If anyone knows about this, can you please let me know?

Thanks,
Dana

just 'google' dandelion recipes - you'll be surprised :)

I did google "edible dandilions" and found a lot of recipes, but I had trouble finding information on which varieties to pick. When I really look, it's amazing how many kinds we have growing just in our yard!

You are right! So many varieties. Here's a site for a little info but I will keep looking.

Another edible "weed" is chickory! Those grow crazy around here and there is nothing better than roasted chickory root in coffee. Also the basal rosette leaves are called endive - perfect for gourmet salads.
