'Canning & Freezing' or' Putting Food By' forum?

Dave, I've noticed lots of different forums with canning and freezing references in them, including my own posts. It would be nice to get them all under one roof, so to speak. Any interest?

I really don't know if there are enough of us for a whole forum, but I'd definitely be there, that is if I can EVER get the deer out of the garden long enough to put anything up again.

I'd be there too! I love canning and the canning thread in the recipe forum has been great discussion and very helpful. I think to those that would visit would find it a very useful tool.

I'll be there, too. I do lots of canning, mostly preserves and not many veggies as I have no veg. garden this year. I'm sure what few of us who would be regulars would have lots to share.

Yay!!! I didn't even have to raise my hand to help get it ;o)

Wintertime might be a little slow, but I'm guessing we can use the time to toss around questions on using the last of those green tomatoes, share good recipes for canned/frozen veggies or meat, tips and suggestions for keeping root crops and winter squash as long as possible...and before ya know it, it'll be time to start looking for fresh strawberries and making preserves again ;o)

Sounds great! Got tons of pickle and relish recipes that the world needs to see again. Most are over 50 years old and a great number have never been published anyway.

Since I've got Mom on line (YoYo1) she'll be a big help over there....just got to get her posting. She's kinda timid about using her computer.

I posted a recipe sometime last year for green tomato marmalade. I'll have to find it, but it's great for those little green tomatoes at the end of the season. :)

Hi, I'm new to the forum, and would love to know how to freeze green beans so that they still taste good when thawed and cooked. Help

Green beans, mmmmmm. I've had good luck with a quick blanch (a minute or less) in boiling water, and a fast dunk into an ice bath. Then I toss them in a towel, and dump them on a cookie sheet to freeze and bag them when they are frozen. It's good to try to keep the size of the beans the same as the skinny little ones will cook, and the older tougher ones won't. I pick every day, and sort them as I pick.
Most of the teeny ones never make it past the boiling water stage, as the butter is handy, and they are soooo sweet and tender...............
