for those interested i got the people that i get goat cheese from to try a brand of salt called "REAL SALT". This is a salt that has had nothing done to it. the first batch was ready the other day the flavor and texture of the feta is exceptional. but on opening the container he remarked on the presents of mold on the surface of the brine. seems the batch made with the "REAL SALT" had enough mold floating on the surface to cover about a quarter ($.25) and normaly it covers the entire surface. i am sure this salt would be better in any cheese that needs salt.

troy, how does one go about making feta? I've only made "farmers cheese" and cottage cheese type cheeses.

i don't know i jusy buy it. i posted the info because i know there are some that do make cheese
I found a few recipes, just for starters. I LOVE feta, and would like to try and make some!
