Our leftover turkey is off the bones and packaged in the fridges. My MIL is going to make turkey salad with the dark meat.
Howie kept the veggie scraps for me when he made the relish tray, and I put them in with the turkey carcass when I simmered it to make stock. In addition to the herbs we used in the aromatic, I put dropped in green onions, yellow and green peppers, broccoli stems, celery and even a couple of white mushrooms. Boy did they make the stock flavorful!
The stock's in the fridge overnight; tomorrow I'll skim off the fat and decide whether to just freeze the stock or plunge ahead and make a nice stew with the leftover white meat. Hmmmmm....stew....

What do you do with Thanksgiving Dinner Leftovers?
I was chuckling as I was reading all the posts! Like most of you I try to keep something for a reminder of being grateful for this holiday. Don't have a big freezer but enjoy giving a great deal of the leftovers to kids who are fighting over who's getting what and more of such and such, lol! When they're having 2 or 3 plates and then the leftovers are pretty much gone you know it was worth all the work! Denise

I overcooked my turkey and it's now making soup. But Ginger is enjoying the turkey.
Our kitties are enjoying scraps, too! They turn their noses up at so many things, but all three of ours love turkey.
I have a pot of turkey soup on the stove. I ended up putting veggies in the stock, along with oregano, thyme, parsley and basil. There's a few taters thrown in there, and a broad assortment of veggies. There's carrots, onions, brocolli florettes, green peppers, celery, green beans, corn, mushrooms...And just a little turkey meat.
Because we always to to Grandma's for Thanksgiving, along with the rest of a huge family, there aren't any leftovers. We love left-over turkey sandwiches, turkey soup, etc, so we buy an extra turkey breast and roast it before we go. That way we have turkey when we get home.
Smart thinkin', Karrie! (Hmmm...maybe I can catch some turkey on sale now at the local grocery store for that purpose!)

We went to mil this year, small family there. After all the past years of taking leftovers home in plastic, she had no more containers to send. I said baggies, baggies baggies!!!. We are taking leftovers home.LOL Turkey, stuffing, gravy and broth. Tonight, I throw 3 maggi chicken cubes in a big pot of water. Throw in turkey broth (jelly now) celery, carrots and send Scotty out to cut egyptian onions, garlic chive and fennel. Throw that in with old ground thyme (garden pickings too slim on thyme)chopped turkey meat and then slow cook with mullers dumplings. Such a wonderful day for soup, it got cold this morning, low after sunup of 52 degrees. It's 65 now. We do enjoy those rare days of cooler weather to put some chili or soup on the stove. Come into the house smellin it cookin, it warms your bones and....your heart and soul.

What are mullers dumplings?
Mullers is a brand of pasta makers, and the dumplings are just their version of very thick noodles. They sell them at the supermarket. Having the soup again for dinner tonight.
