We first tried gator during a vacation to Key West (yummy), but I sure never heard of "Leg of Gator" before! LOL We can only get the filets here - are we missing out on something good?

From what I heard that was a "gator sauce piquant" (sorta like I cook squirrel)...bet it was tasty!

I've fried it like chicken before also..not bad!!

The sauce piquant is basically seasoned squirrel, brown in oil, then set aside. Saute green pepper, onions, (garlic if you like), and a spoon of flour in the oil. Add the squirrel and some tomato sauce, then add water to cover the meat...put on a lid and cook for an hour or so. Very very tasty and tender.

There is a recipe on Dave's somewhere. I think Lisa may have posted one, and also perhaps RedRose. If I find it I'll post a hyperlink here.

(It's a GREAT recipe, especially for some of those bigger squirrels that might be a bit tough.

That sounds really similar. She used her homemade tomato paste and salsa in it, and she simmered everything all day. It was unbelievably tender and flavorful in that sauce!
