forum changes

I went to "My Favorites" to add to the forums I watch, but didn't see the recipe forum listed. How do I find and add it to my forums?

woodspirit, go to "Preferences" (in the "About You" section, right hand column.) Click on "forums". The recipe forum is in the section titled "Home Forums".

Or, if you look at the top of the main page you come to every time you visit DG, the one that says "Welcome home, woodspirit1!", look near the top for "There are 82 forums and you are "watching" 82 of them." (or whichever number you are watching). The word "watching" is green. Click on that green word and it will take you right to where Vols is telling you to go and you can update your forum preferences there. Just scroll down to "Home Forums" and check the box next to "Recipes". :)!

going to post recipes for beignets and sfinges here.

Beignets: (family recipe, although cosmopolitan)

3 cups all-purpose flour 1 cup water
2 tbls baking powder 1 cup whole milk
1 tsp salt 1 egg, beaten
1/2 cup granulated sugar

Mix and sift togeather the flour, baking powder, salt and 1/2 cup of the sugar in a bowl. Mix the water, milk and egg in a seperate bowl. Add the milk mixture to the flour mixture, mix well.

In a deep frier or large cast iron pot heat 2-2 1/2 quarts vegtiable oil to 325 degrees.

To make beignets:
Use 2 spoons, with 1 pick up mix and with the other push the dough into the hot oil. Watch temp and yourself. do not let it go to much below 325, the beignets will be greasy. Maybe no more then 10 at a time if you are using a deep fryer. Adjust heat to maintain 325 degrees. Fry for 6-7 minutes or until golden brown. Drain on a rack.

Sift powder sugar for dusting.

Sfigfnes (recipe from St. Joesph Alter cookbook)

To every pound of flour add: (adjust for smaller amounts)
2 tsp baking powder 2 cups whole milk
1 tsp salt
4 eggs

Vegitable oil for frying

Sift togeather flour, baking powder and salt. Beat eggs lightly, add milk. Combine all ingredients. With a tablespoon, spoon mixture into HOT oil. Fry untl light brown. Drain well on paper tower. Sprinkle w/ powder or granulated sugar mixed with cinnamon, or leave plain. Yield about 3 dozen.
