Jo, I agree, that is the most wonderful cake, because you feel so virtuous when you eat it. I have enjoyed it with a buttercream and crushed pineapple frosting, but did you mean the pineapple was cooked into the cake? Oh, that would be so moist! And to really make it over the top, add some chopped walnuts and apples. Uh oh, I think I hear the bakery calling me.

The recipe´ has been printed out, Dear Ladies, and will be tried out as soon as I can get SWMBO to try it out, cos she doesn't believe it either, or else I must go to the nearest bakery, and ask one of the girls if they could do it for me.

This is truly cruel, I want to tell you! I have no regular oven connected, as my O'Keefe and Merritt is still not hooked up, and my DeLonghi toaster oven just isn't the same. I can see I will have to think of something to inspire someone with an oven to bake me a carrot cake like I like, real soon. It's bad enough that I have to order my fruit cake from Corsicana, and my flan from the restaurant take out. Now this! Ladyfingers, anyone?

That's the brand name of a wonderful old stove! They were real innovators when we finally began to have a choice of stoves. Some had two ovens, with separate controls so you could bake a cake and a beef roast at the same time, at different temperatures. Others had, instead of the extra oven, a "grillevator", which was a broiler unit, and the grill was adjustable to near or far from the burner. There were either six burners on top or four burners and a center griddle. There was a shelf that folded down over the burners to provide a workspace, and when opened, it formed a warming shelf. Mine has the griddle and grillevator. It is about a 1945 model, and I took it apart down to the last screw to clean it. It took me 15 days, working all day every day, in March cold outside. No one had ever cleaned it, apparently, and the smell of greasy meat and coconut cream pie rose from it as I sloshed on the hot water. I still need to get the clock and timer repaired. The thermostat to the main oven was leaking, and I think I got it fixed, but redoing the kitchen and back porch has slowed down things for placing it properly and connecting it. I did have it connected at one time, but could smell gas with this super sensitive nose of mine, and I could never feel safe until I fixed that. The oven wouldn't come on, something to do with the faulty thermostat, and I don't know if it will or not now. These stoves are in great demand, and parts are scarce. A good working one will sell in excess of $2,000, and the fancier ones, which mine is not, can go almost twice that. Some daring folks are having them painted bright primary colors. Mine will stay white.

According to my neighbors (dedicated carrot cake lovers) the secret to a really good cake is to use carrots that have been left in the ground too long to be fit for eating plain ;) That is now what I do with my too-big carrots: make them into cake for others. I have tried several recipes, but lost the favorite. Oh well. The last one I made used crushed pineapple and plums. No reaction yet on taste. I don't care for them much myself (not a sweet eater) so I am not a good judge.

Maybe we can have a contest: make several cakelets and send them to various judges. What a way to spend the winter!

Anybody else want to be a baker? We can keep Jo and Liz well-supplied for a few months ;) I have about 40 more over-grown baby carrots just waiting for a hungry person who loves carrot cake.

Aimee, I forgot to post earlier about your stove: what a wonderful treasure! My grandmother had one similar when I was a little girl. It was replaced in about '69, soon after she had some pretty major health difficulties and couldn't manage the strength to handle it anymore. But I sure remember that stove. She made green tea every morning on it. Thanks for the wonderful memories.
