Molly b:My pressure canner is a Presto cooker/canner. It is an older model, but still in very good condition. My sisters MIL gave it to me, she used to do lots of canning. I just use it to hot water bath my canning stuff..I stick to the easy stuff.

Have you tried just canning the stuff in hot jars with hot lids? That's how I do Tomatoes, and as long as everything is hot when you sill it they should be fine. I've always been scared of the pressure cookers too! so don't feel bad!!

I've used pressure canners over the years, and never had a problem. Like any serious tool, you don't want to rush them or pressure can something when you are easily distracted. After awhile, you develope an ear for the steady escapes of steam that are either a rocking of the weight or a rattling rhythmic hiss.

When I was young and had a family to feed, I used my smaller pressure cooker to make stews or cook a corned beef. Giblets cooked in a pressure cooker are so tender you can cut them with a fork. I had a larger pressure canner, as well, and canned beef before we headed up the Alcan Highway to move to Alaska.

Pressure cookers are safer than driving a car. You just have to pay attention.

Amen, Weeze. I used mine jillions of hours and never had a problem. Just be sure to be paying attention. In other words, in car lang., don't go to sleep at the wheel.

Aw, heck, for a second I thought you were willing to ship the canner. I think I need to make that trip to Thibodaux and help you out. Maybe when the weather turns cold here. So. La. is a nice place to be when winter hits.
