LOL, Gardenwife! "How wude!" LOLOL! I read your response about menudo and in all the excitement I forgot to tell you what else is menudo! It's a Mexican soup made from beef tripe and hominy. GREAT stuff! There's a little old Mexican man who owns a restaurant in the Piedras Negras mercado (market ~ their answer to our mall, set up like a farmer's market, no doors). He's the hostess, waiter, bartender and chef all in one and man can he cook! Kenny and I make a run for the border once every few months to get some authentic enchiladas and menudo. YUMMY!!!!!!!!!! Oooh, I want some now ~ better find that recipe I packed away...
