I just came home from Georgia and i picked some pecans right off the tree. Now can i shell them and use them or do they need to be dried? I was told i had to dry them in the oven first. If so, for how long and at what temperature?
Any help would be greatly appreciated as I would like to use these in my holiday baking.

were they still in green hull???? those aren't ripe yet. let me know.
As tiG says, if they are still in the green husk, they are not ripe yet and won't be good. If they are out of the husk and ripe you can use them right after you shell them.
It's customary to wait until they fall, but I guess if you are leaving you have to pick them green. That's one way to beat the squirrels and birds to them.
