Trish is now an honorary (sp?) cajun! I showed her how to make a roux tonight and she did great! I tell ya, the roux was so pretty, it brought tears to my eyes :)! So, now she has been crowned honorary cajun and can now make her own gumbos, stews and anything else cajun style..whatta gal! I even taught her to say:AYIEEEEEE! ...I can now leave her with extreme faith that she too will cook gumbo.
editors note: a roux is the basis of any cajun cooking, once it is mastered you are home free!

Howie has not tried it yet, but he only has Lisa's written instructions and not her in-home demonstration! The Kirby salesguys just don't know how to make a good roux, so c'mon up to Ohio next, Lisa!

Redrose, it might seem so, but you would be surprised at the number of people who can't get it right. I think most have a tendency to rush it. When I lived in Baton Rouge, my neighbor was a totally cajun cook, so it came naturally to her to give instructions like this: "After you make the roux..". She just assumed everyone knew how to make the roux. One of her friends called it "burnt gravy".

Hey Lisa, if you're really looking for snow next time - this is the place, and I'll let you cook, but you'll have to leave the peppers and tobasco home - too many food allergies here. You could bring some shrimp along though...
